Spiced ginger and coconut
Ingredients
- 2 tbsp coconut oil, melted
- 2 tbsp desiccated coconut
- 100 g ginger biscuits, crushed
- 1/4 cup Woolworths maple syrup
- zest of one orange, finely grated
- 1 tbsp vanilla extract
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1 cinnamon stick
- 400 ml coconut milk
- 500 ml Woolworths full cream plain yoghurt

Cooking Instructions
- Whisk together the yoghurt, coconut milk, cinnamon, nutmeg, ginger, vanilla, orange zest, vanilla and maple syrup.
- Mix together the ginger biscuits, desiccated coconut and coconut oil.
- Pour the yoghurt mixture into ice lolly moulds then sprinkle the cookie mixture on top.
- Push the lolly stick through, then freeze until completely set before unmoulding and enjoying.
