Spiced ginger and coconut

Ingredients

  • 2 tbsp coconut oil, melted
  • 2 tbsp desiccated coconut
  • 100 g ginger biscuits, crushed
  • 1/4 cup Woolworths maple syrup
  • zest of one orange, finely grated
  • 1 tbsp vanilla extract
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1 cinnamon stick
  • 400 ml coconut milk
  • 500 ml Woolworths full cream plain yoghurt

Cooking Instructions

  1. Whisk together the yoghurt, coconut milk, cinnamon, nutmeg, ginger, vanilla, orange zest, vanilla and maple syrup.
  2. Mix together the ginger biscuits, desiccated coconut and coconut oil.
  3. Pour the yoghurt mixture into ice lolly moulds then sprinkle the cookie mixture on top.
  4. Push the lolly stick through, then freeze until completely set before unmoulding and enjoying.
