Steamed prawns with citrus salad

Ingredients

  • 500 g Prawns, shells & heads removed & deveined
  • 1/2 cucumber, thinly sliced into matchsticks
  • 1 red chilli, seeded and chopped
  • 2-3 heads cos lettuce, for serving
  • 8 radishes, rinsed and sliced
  • sea salt and freshly ground black pepper, to taste
  • 4 tbsp honey
  • 6 tsp Dijon mustard, to taste
  • 25 ml lemon juice
  • 3 tbsp canola oil, plus extra for greasing
  • 2 tbls pouring cream

Cooking Instructions

  1. Steam the prawns for 5 minutes until they are bright pink and opaque. 
  2. Assemble the rest of the salad ingredients on a serving platter and top with the prawns. 
  3. Pour over the dressing and serve immediately.

To make the dressing:

  1. Stir the honey, mustard and lemon juice together in a pouring jug. 
  2. Slowly add the oil, whisking all the while, to form an emulsion. 
  3. Add the cream and combine.
