Roasted pineapples with ginger

Ingredients
- 1/2 tsp vanilla paste
- 1 cinnamon stick
- 5 sprigs mint
- 5 ml ginger, ground
- 20 g granulated sugar
- 60 g fresh ginger, finely grated
- 2 pineapples

Cooking Instructions
- Pre-heat the oven to 180°C.
- Place the pineapple on the chopping board. Slice the base of the pineapple off for it to stand steadily on the board.
- Cut the outer skin off the pineapple. Remove the fibrous core and cut the pineapple into large wedges.
- Place both gingers, vanilla, cinnamon and sugar in a bowl then add the pineapples. Allow the pineapple to macerate in the liquid for 30 minutes before placing in the oven to roast.
- Place pineapples in a roasting tray with the liquid they have been macerating in and roast for about 30 minutes.
- Remove from the oven and place on a platter. Garnish with sprigs of mint and serve with low fat yoghurt.
