Roasted pineapples with ginger

Ingredients

  • 1/2 tsp vanilla paste
  • 1 cinnamon stick
  • 5 sprigs mint
  • 5 ml ginger, ground
  • 20 g granulated sugar
  • 60 g fresh ginger, finely grated
  • 2 pineapples

Cooking Instructions

  1. Pre-heat the oven to 180°C.
  2. Place the pineapple on the chopping board.  Slice the base of the pineapple off for it to stand steadily on the board.
  3. Cut the outer skin off the pineapple. Remove the fibrous core and cut the pineapple into large wedges.
  4. Place both gingers, vanilla, cinnamon and sugar in a bowl then add the pineapples.  Allow the pineapple to macerate in the liquid for 30 minutes before placing in the oven to roast.
  5. Place pineapples in a roasting tray with the liquid they have been macerating in and roast for about 30 minutes.
  6. Remove from the oven and place on a platter.  Garnish with sprigs of mint and serve with low fat yoghurt.
