Coconut-and-ginger pork mince

Ingredients
- 200 g rice noodles, cooked
- fresh coconut, shaved, for serving
- sriracha sauce, for serving (optional)
- 1 tbsp fish sauce
- sea salt and freshly ground black pepper, to taste
- 400 ml coconut milk
- 500 g pork mince
- 2 garlic clove, chopped
- 1 x 5 cm piece ginger, peeled and finely grated
- 4 tbsp coconut oil
- 1/2 red onion, chopped

Cooking Instructions
- Soften the onion in the oil for 5 minutes over a low heat, then add the ginger and garlic and cook for a further minute.
- Increase the heat, add the mince and brown. Fold in the coconut milk and reduce slightly. Season and add the fish sauce. Serve with the sriracha sauce, coconut and noodles
