Triple chocolate mousse cake
Ingredients
- toasted flaked almonds
- 1/2 tsp vanilla bean paste
- 375 g cake flour
- 50 g butter
- 6 Extra large free range egg whites
- 375 g castor sugar

Cooking Instructions
- Whisk together the castor sugar and egg whites.
- Whisk melted butter in to combine.
- Add the flour and vanilla essence.
- Whisk until a smooth mixture forms.
- Spoon about 2T of mixture onto a silpad spread thinly into a circle.
- Sprinkle almonds into the mixture.
- Bake at 150°C for about 10 minutes until golden.
- Quickly take them out and mould into a cone. Holding until cooled to set the shape.
- Repeat the process until no mixture remains.
- Arrange tuille cones on Woolworths triple chocolate mousse cake.
- Sprinkle with fresh blueberries.
