Triple chocolate mousse cake

Ingredients

  • toasted flaked almonds
  • 1/2 tsp vanilla bean paste
  • 375 g cake flour
  • 50 g butter
  • 6 Extra large free range egg whites
  • 375 g castor sugar

Cooking Instructions

  1. Whisk together the castor sugar and egg whites.
  2. Whisk melted butter in to combine.
  3. Add the flour and vanilla essence.
  4. Whisk until a smooth mixture forms.
  5. Spoon about 2T of mixture onto a silpad spread thinly into a circle.
  6. Sprinkle almonds into the mixture.
  7. Bake at 150°C for about 10 minutes until golden.
  8. Quickly take them out and mould into a cone. Holding until cooled to set the shape.
  9. Repeat the process until no mixture remains.
  10. Arrange tuille cones on Woolworths triple chocolate mousse cake.
  11. Sprinkle with fresh blueberries.
