Roasted sticky pork ribs

Ingredients

  • 3 tbsp canola oil, plus extra for greasing
  • 1/2 onion, finely chopped
  • 4 cloves garlic, finely chopped
  • 2 x 400 ml cans chopped tomatoes
  • 3 tsp smoked paprika
  • 1/2 cup Worcester sauce
  • 45 ml tomato paste
  • 3 Tbsp white vinegar
  • 4 Tbsp brown or treacle sugar
  • 2 x 1kg racks pork ribs

Cooking Instructions

  1. Preheat the oven to 180°C. Heat the canola oil in a pan over a medium heat. Add the onion and garlic and cook until browned. Add the canned tomato, smoked paprika, Worcester sauce, tomato paste, vinegar and brown sugar. Cook until the sugar has dissolved and the sauce is slightly reduced.
  2. Place the ribs on a large roasting tray and coat with half the sauce. Roast for 45 minutes.
  3. Remove the ribs from the oven and baste with more sauce, return to the oven and cook for a further 5 minutes, then baste again. Repeat this process until the sauce is finished and the ribs are well coated and sticky.
