Pork fillet in creamy mushroom sauce

Ingredients
- 500 g pork fillet
- 250g mushrooms, sliced
- 4 cloves garlic cloves, finely chopped
- 4 sprigs fresh thyme
- 250 ml fresh Ayrshire cream
- squeeze fresh lemon leaves
- sea salt and milled pepper
- basmati rice, to serve

Cooking Instructions
- Heat a large frying pan over high heat.
- Rub the pork with 1 tablespoon of oil and season with salt and pepper.
- Place in the hot pan and sear on all sides until golden brown then lower the heat slightly and allow to cook for 10-15 minutes until the meat is cooked to your preference.
- When the meat is cooked, remove from the pan and cover with foil to allow it to rest.
- In the same pan, fry the mushrooms in a splash of oil until golden brown then add the garlic and thyme.
- Saute for 30 seconds then pour in the cream, lemon juice and seasoning.
- Allow to simmer for 5 minutes.
- Slice the pork into thick slices then place in the sauce.
- Serve with steamed Basmati rice.
