Pork fillet in creamy mushroom sauce

Ingredients

  • 500 g pork fillet
  • 250g mushrooms, sliced
  • 4 cloves garlic cloves, finely chopped
  • 4 sprigs fresh thyme
  • 250 ml fresh Ayrshire cream
  • squeeze fresh lemon leaves
  • sea salt and milled pepper
  • basmati rice, to serve

Cooking Instructions

  1. Heat a large frying pan over high heat.
  2. Rub the pork with 1 tablespoon of oil and season with salt and pepper.
  3. Place in the hot pan and sear on all sides until golden brown then lower the heat slightly and allow to cook for 10-15 minutes until the meat is cooked to your preference.
  4. When the meat is cooked, remove from the pan and cover with foil to allow it to rest.
  5. In the same pan, fry the mushrooms in a splash of oil until golden brown then add the garlic and thyme.
  6. Saute for 30 seconds then pour in the cream, lemon juice and seasoning. 
  7. Allow to simmer for 5 minutes.
  8. Slice the pork into thick slices then place in the sauce.
  9. Serve with steamed Basmati rice.
