Mexican inspired pizza

Ingredients

  • Woolworths sriracha flavoured nacho chips to top
  • 5 tbsp Woolworths zesty guacamole
  • 100 g Woolworths blue rock cheese
  • 4 Tbsp coriander, roughly chopped
  • 4 tbsp jalapeño, sliced
  • Woolworths thin and crispy pizza bases
  • 1/2 cup Woolworths smokey BBQ marinade
  • 1 Woolworths rotisserie chicken, torn into large chunks
  • salt to taste
  • 2 tbsp extra virgin olive oil
  • 150 g Fresh corn

Cooking Instructions

  1. Coat the corn in the olive oil and season lightly  before roasting in the oven for 180 C for 15minutes or until slightly charred.
  2. Coat the chucked chicken in BBQ marinade before adding to the pizza base.
  3. Add charred corn, jalapeños and coriander.
  4. Crumble the blue cheese over the pizza.
  5. Place pizza in the oven to cook for 15-20minutes at 200 C.
  6. Top with extra coriander, guacamole and nacho chips.
