Mozzarella chicken fillets

Ingredients

  • 1/2 lemon, juiced and zested
  • 300 g Woolworths Frozen Mint flavoured peas
  • 1 x 600 g Easy to cook chicken fillets with mozzarella
  • 3 Organic medium sweet potatoes, peeled and cubed
  • to serve fresh mint leaves
  • 1/2 cup, melted unsalted butter
  • 1 juiced and zested lemon, cut into 8 slices
  • 1 L organic chicken stock

Cooking Instructions

For the chicken fillets:

  1. Pre-heat oven to 180° C.
  2. Remove sleeve and outer packaging. Place the product with foil tray in centre of oven on a baking sheet.
  3. Bake uncovered for 20 – 30 minutes. Remove from the oven and allow to stand for 5 minutes before serving.

For the potatoes:

  1. Thinly slice the sweet potatoes into rounds then arrange in a deep baking dish.
  2. Pour over the chicken stock, the lemon juice and zest, dot with butter and season.
  3. Bake for 40mins at 180’c.

For the peas:

  1. Cook the peas in salted boiling water for 5mins.
  2. Combine with the lemon zest and juice in a food processor and blitz until smooth.
  3. Season to taste and finish with extra fresh mint leaves.
