Apricot, onion kassler chops

Ingredients
- 4 Kassler chops
- salt and freshly ground black pepper
- 3 tbsp olive oil
- 4 tsp wholegrain mustard
- 2 tbsp onion marmalade
- 2 tbsp Apricot jam
- 1/2 cup apple juice

Cooking Instructions
- To make the glaze, combine the apple juice, apricot jam, apricots, onion marmalade and mustard in a saucepan over a medium heat.
- Bring to a boil, reduce the heat, and simmer for 15 minutes or until syrupy.
- Preheat a grill pan.
- Brush the kassler chops with oil and fry for 2 minutes on each side or until browned.
- Pour over the glaze and cook for a further 2 – 3 minutes.
- Season to taste and serve.
