Pan-fried gnocchi and truffled mushrooms

Ingredients

  • gnocchi
  • 1/2 tsp truffle oil
  • fresh Ayrshire cream
  • exotic mushroom mix
  • 100 g baby spinach
  • 4 Tbsp extra virgin olive oil, plus extra for drizzling
  • salt
  • 1.5 g pepper
  • garlic flakes

Cooking Instructions

  1. Heat the oil over a medium heat and add the mushrooms and garlic, season with salt and pepper.
  2. Once softened add the cream and baby spinach. Add a few drops of truffle oil.
  3. Blanch the gnocchi.
  4. Before serving, fry the blanched gnocchi in a pan to colour. Serve with mushroom sauce.
