Zesty avocado salad with walnuts

Ingredients

  • 4 celery stalk, diced
  • 3 large firm, ripe avocados
  • 1/3 cup avocado oil
  • sea salt and freshly ground pepper, to taste
  • 50 g walnuts, halved
  • 1 handful vegetable sprouts, to garnish

Cooking Instructions

  1. Run a vegetable peeler along the length of the celery sticks to create curls then transfer to a bowl of iced water.
  2. Spoon out the avocado flesh, toss with the lemon juice and avocado oil and season to taste.
  3. Place the avocado on a plate and top with the toasted walnuts and celery curls.
  4. Garnish with the celery and mustard cress sprouts.
