    Cooking Instructions

    INGREDIENTS
    From your pantry:

    • Vegetable oil
    • Salt
    • Freshly ground black pepper

    What's inside:

    • Thai green curry paste
    • Coconut milk
    • Cooked long grain rice

    SOMETHING DIFFERENT

    Replace the chicken with 200g fresh kingklip or hake, cut into small pieces

    STEP 1

    Add 1 tablespoon of oil and the Thai green curry paste to a cold, medium-sized saucepan. Bring to a low heat and gently fry the paste for 2 minutes or until it starts to boil.

    STEP 2

    Add the cubed chicken, sauté for 3 minutes

    STEP 3

    Add the sliced mange tout, baby corn and the coconut milk. Simmer for 3 minutes or until the chicken is cooked through. Season to taste, if desired.

    STEP 4

    Decant rice into a microwaveable bowl, breaking up any clumps with a fork. Microwave on 100% power for 2 minutes or until warm throughout.

    STEP 5

    To serve: divide the rice into two plates. Top with the Thai green curry. Garnish with fresh basil leaves.

    FOR A VEGAN OPTION

    In STEP 2, replace the chicken with 200 g extra firm tofu, cubed.
