Maple glazed pork chops

Ingredients
- 4 Pork loin chops
- freshly ground black pepper, to taste
- salt
- 2 Tbsp olive oil, to drizzle
- 4 Tbsp wholegrain mustard
- 2 Tbsp fresh lime, juiced
- 2 Tbsp fresh orange juice
- 6 Tbsp maple syrup

Cooking Instructions
- Preheat the oven to 220 °C.
- Combine the maple syrup, orange juice, lime juice and mustard in a saucepan over a medium heat.
- Bring to the boil, then reduce the heat and simmer for 10 minutes or until the mixture is syrupy.
- Coat the pork chops with oil and season with the salt and pepper.
- Fry the chops for 5 minutes in another pan on a medium-high heat or until browned.
- Transfer the chops to a roasting dish and pour the glaze over them.
- Bake the chops for 10 minutes until the glaze has become sticky.
