Maple and pineapple glazed ham

Serving Suggestion:Enjoy with duck fat roasted baby potatoes and grilled pineapple wedges.

Ingredients

  • 1 cup Pineapple juice
  • 50 g fresh thyme, chopped
  • 4 tsp soya sauce
  • 4 Tbsp wholegrain mustard
  • 1/3 cup maple syrup

Cooking Instructions

  1. Preheat the oven to 160 °C.
  2. Place the ham in a roasting pan.
  3. With a sharp knife, remove the skin and enough fat from the ham so that only 1/2 cm of fat remains. Score the fat with a sharp knife in a crisscross to create a diamond pattern.
  4. To make the glaze, heat the pineapple juice, maple syrup, mustard, soya sauce and thyme for about 5 minutes until slightly thickened.
  5. Brush the ham with the glaze and place it in the oven.
  6. Bake the ham for 2 – 2 1/2 hours until it is golden brown, basting it every 15 minutes with the glaze.
  7. Remove the ham from the oven and let it rest for 15 minutes before carving.
  8. Serve the ham warm with the remaining glaze.
