Maple vanilla plum crumble

Ingredients

  • Double cream
  • 75 g ground almonds
  • 75 g brown sugar
  • 3 Tbsp butter
  • 1/2 tsp salt
  • 250 g cake flour, sifted
  • 105 g brown sugar
  • A few drops vanilla extract
  • 6 Tbsp maple syrup
  • 40 g butter
  • 1 kg plums, quartered with pips removed

Cooking Instructions

  1. Preheat the oven to 190 °C.
  2. Heat the butter in a large frying pan over a medium heat.
  3. Add the plums, maple syrup, vanilla extract and sugar and toss to combine.
  4. Cook for 3 – 4 minutes until the plums are soft but still holding their shape, and the juices are beginning to caramelise.
  5. Transfer the plums to an oven dish.
  6. For the crumble topping, sieve the flour and salt into a bowl.
  7. Add the cold butter and use your fingertips to rub it into the flour until the mixture resembles coarse breadcrumbs.
  8. Mix in the sugar and ground almonds, then spoon the mixture over the plums.
  9. Bake the crumble for 25 – 30 minutes, until the top is golden and the plums are bubbling.
  10. Serve hot with dollops of double cream and/or ice cream and drizzled with maple syrup.
