Maple vanilla plum crumble

Ingredients
- Double cream
- 75 g ground almonds
- 75 g brown sugar
- 3 Tbsp butter
- 1/2 tsp salt
- 250 g cake flour, sifted
- 105 g brown sugar
- A few drops vanilla extract
- 6 Tbsp maple syrup
- 40 g butter
- 1 kg plums, quartered with pips removed

Cooking Instructions
- Preheat the oven to 190 °C.
- Heat the butter in a large frying pan over a medium heat.
- Add the plums, maple syrup, vanilla extract and sugar and toss to combine.
- Cook for 3 – 4 minutes until the plums are soft but still holding their shape, and the juices are beginning to caramelise.
- Transfer the plums to an oven dish.
- For the crumble topping, sieve the flour and salt into a bowl.
- Add the cold butter and use your fingertips to rub it into the flour until the mixture resembles coarse breadcrumbs.
- Mix in the sugar and ground almonds, then spoon the mixture over the plums.
- Bake the crumble for 25 – 30 minutes, until the top is golden and the plums are bubbling.
- Serve hot with dollops of double cream and/or ice cream and drizzled with maple syrup.
