Maple and ginger caramelised pears

Ingredients

  • 3 x 125 g fresh blueberries
  • 300 ml Double cream
  • A few drops vanilla extract
  • 3 Tbsp lemon juice
  • 1 tbsp maple syrup
  • 1 tsp fresh ginger, grated
  • 2 tsp cinnamon stick
  • 40 g butter
  • 4 Ripe pears, peeled, quartered and pips removed
  • 500 ml water
  • 50 g castor sugar, plus extra for dipping the pastry shapes
  • 50 g walnuts

Cooking Instructions

  1. For the candied walnuts, place the walnuts, sugar and water in a bowl and toss to coat.
  2. Heat a large non-stick frying pan over a medium heat and add the walnuts.
  3. Cook them for 6 – 8 minutes, stirring occasionally, or until caramelised. Set aside to cool.
  4. For the pears, melt the butter with the cinnamon, ginger, maple syrup, lemon juice and vanilla extract over a medium high heat for about 8 minutes until slightly thickened.
  5. Add the pears and sauté them for 3 – 5 minutes until slightly soft.
  6. Serve the pears warm, topped with the remaining maple syrup sauce, double cream, candied walnuts and fresh blueberries.
