Maple and ginger caramelised pears

Ingredients
- 3 x 125 g fresh blueberries
- 300 ml Double cream
- A few drops vanilla extract
- 3 Tbsp lemon juice
- 1 tbsp maple syrup
- 1 tsp fresh ginger, grated
- 2 tsp cinnamon stick
- 40 g butter
- 4 Ripe pears, peeled, quartered and pips removed
- 500 ml water
- 50 g castor sugar, plus extra for dipping the pastry shapes
- 50 g walnuts

Cooking Instructions
- For the candied walnuts, place the walnuts, sugar and water in a bowl and toss to coat.
- Heat a large non-stick frying pan over a medium heat and add the walnuts.
- Cook them for 6 – 8 minutes, stirring occasionally, or until caramelised. Set aside to cool.
- For the pears, melt the butter with the cinnamon, ginger, maple syrup, lemon juice and vanilla extract over a medium high heat for about 8 minutes until slightly thickened.
- Add the pears and sauté them for 3 – 5 minutes until slightly soft.
- Serve the pears warm, topped with the remaining maple syrup sauce, double cream, candied walnuts and fresh blueberries.
