Raspberry and rose cordial

Ingredients
- 1 1/2 cups white sugar
- 1 lemon, juiced
- 1 1/2 cups water
- 300 g raspberries
- 2 tbsp rose water

Cooking Instructions
- Place sugar, lemon juice and water in a pot over medium-low heat and stir until the sugar has dissolved.
- Add raspberries and increase the heat to bring to a simmer.
- Simmer for 10 minutes then remove from heat and stir in rosewater.
- Press mixture through a fine sieve to remove the seeds.
- Store cordial in a clean, sterilised bottle.
- To serve, fill a glass with ice, add some cordial, then top with the sparkling water.
- Garnish with some rose petals
