Steak & Chips With Bearnaise

Ingredients
- rib eye steak
- potatoes
- parsley
- vinegar
- butter, softened
- shallots, finely chopped
- 3 Tbsp sunflower oil
- generous pinch of salt
- pepper

Cooking Instructions
For the béarnaise:
In a saucepan bring the shallots, parsley and cracked pepper to the boil with the vinegar until the vinegar has slightly reduced. Strain and add the liquid to a double boiler along with the egg yolks, begin whisking. Once the yolks have thickened and lightened in colour turn the heat off and continue whisking. Whisk in the melted butter by slowly drizzling it in.
Serve with steak and shoestring chips.
