Truffled Porcini Gravy
Ingredients
- 30 g dried porcini mushrooms soaked in 250ml boiling water
- 85 ml red wine
- Pan juices from your roast (chicken, lamb, beef, turkey)
- 2 Tbsp flour mixed with a few tablespoons water to make a paste
- 1/2 tsp truffle oil
- salt and pepper

Cooking Instructions
- Combine the porcini liquid, wine and pan juices in a small saucepan and allow to come to a boil.
- Allow to simmer for 10 minutes then whisk in the flour mixture then turn down the heat and allow to simmer gently for another 10 minutes.
- Season with the truffle oil and salt & pepper and serve.
