Truffled Porcini Gravy

Ingredients

  • 30 g dried porcini mushrooms soaked in 250ml boiling water
  • 85 ml red wine
  • Pan juices from your roast (chicken, lamb, beef, turkey)
  • 2 Tbsp flour mixed with a few tablespoons water to make a paste
  • 1/2 tsp truffle oil
  • salt and pepper

Cooking Instructions

  1. Combine the porcini liquid, wine and pan juices in a small saucepan and allow to come to a boil.
  2. Allow to simmer for 10 minutes then whisk in the flour mixture then turn down the heat and allow to simmer gently for another 10 minutes.  
  3. Season with the truffle oil and salt & pepper and serve.
