Grilled baby brinjal

Ingredients
- 1 x punnet baby brinjals
- olive oil, to drizzle
- 1/2 cup double cream Ayrshire yoghurt
- 1 juiced and zested lemon, cut into 8 slices
- microherbs, to garnish
- 3 cloves garlic, crushed
- sea salt and milled pepper
- small handful of basil leaves, finely chopped
- 1 red chilli, roughly chopped

Cooking Instructions
- Pre-heat a griddle pan over high heat.
- Brush the baby aubergine halves with olive oil then season with salt and pepper.
- Place, flesh-side down, on the hot griddle pan and allow to grill for 5-7 minutes per side until the aubergines are cooked through.
- To make the dressing, combine all the ingredients in a small bowl.
- Serve the grilled baby aubergines topped with the dressing, basil leave and finely chopped chilli.
