Grilled baby brinjal

Ingredients

  • 1 x punnet baby brinjals
  • olive oil, to drizzle
  • 1/2 cup double cream Ayrshire yoghurt
  • 1 juiced and zested lemon, cut into 8 slices
  • microherbs, to garnish
  • 3 cloves garlic, crushed
  • sea salt and milled pepper
  • small handful of basil leaves, finely chopped
  • 1 red chilli, roughly chopped

Cooking Instructions

  1. Pre-heat a griddle pan over high heat.
  2. Brush the baby aubergine halves with olive oil then season with salt and pepper.
  3. Place, flesh-side down, on the hot griddle pan and allow to grill for 5-7 minutes per side until the aubergines are cooked through.
  4. To make the dressing, combine all the ingredients in a small bowl.
  5. Serve the grilled baby aubergines topped with the dressing, basil leave and finely chopped chilli.
