Raw broccoli salad

Ingredients

  • parsley, roughly chopped, to garnish
  • 1/2 lemon, juiced
  • salt and freshly ground black pepper
  • 2 tbsp Dijon mustard
  • 4 tbsp plain yoghurt
  • 3 tbsp chives, finely chopped
  • 100 g raw walnuts, reserve some for garnish
  • 200 g rainbow carrot spaghetti
  • 100 g dried cranberries
  • 1 head broccoli

Cooking Instructions

  1. Thinly shave the broccoli using either the slicing attachment on your food processor a mandolin or a sharp knife.
  2. Add the thinly shaved broccoli to a mixing bowl along with the dried cranberries, carrots, pecans and chives.
  3. Drizzle over the dressing and toss through before adding to a serving dish. Sprinkle over the parsley and finely grate the pecans over to create a pecan dust before serving.
