Raw broccoli salad
Ingredients
- parsley, roughly chopped, to garnish
- 1/2 lemon, juiced
- salt and freshly ground black pepper
- 2 tbsp Dijon mustard
- 4 tbsp plain yoghurt
- 3 tbsp chives, finely chopped
- 100 g raw walnuts, reserve some for garnish
- 200 g rainbow carrot spaghetti
- 100 g dried cranberries
- 1 head broccoli

Cooking Instructions
- Thinly shave the broccoli using either the slicing attachment on your food processor a mandolin or a sharp knife.
- Add the thinly shaved broccoli to a mixing bowl along with the dried cranberries, carrots, pecans and chives.
- Drizzle over the dressing and toss through before adding to a serving dish. Sprinkle over the parsley and finely grate the pecans over to create a pecan dust before serving.
