Steamed mussels

These delicious mussels are ridiculously easy to make. Soaking up the juices with your favourite bread afterwards is the best part of the meal!

Ingredients

  • 500 ml dry white wine
  • 450 to 500g mussels in their shell or half shell
  • 5 garlic cloves, finely chopped
  • 4 Tbsp butter, melted
  • 4 tbsp fresh parsley,finely chopped
  • 4 sprigs fresh thyme

Cooking Instructions

  1. Pour the wine into a large pot and bring it to the boil.
  2. Add the mussels and garlic and cover the pot, allowing them to steam for a few minutes until the shells open. Discard any mussels that do not open.
  3. Remove the lid and add the butter and herbs, and let the sauce reduce and thicken a little.
  4. Tip into a large bowl and pour over the sauce.
