Moroccan chicken with hummus veggies

Ingredients
- Woolworths butterflied Moroccan chicken, prepared as instructed
- 500 g butternut chunks
- 1 large sweet potato, cut into thin wedges
- 2 brinjals, cut into wedges
- salt and freshly ground pepper, to taste
- extra virgin olive oil, to drizzle over and coat
- lemon wedges to serve
- 180 g hummus
- 1 garlic clove, finely grated
- 1/4 cup sweet chilli sauce
- 1/2 cup extra virgin olive oil

Cooking Instructions
- In the same oven that the chicken is roasting in: Add the veggies to a roasting tray and season with the salt and pepper before tossing with the olive oil to coat then place in the oven to roast for about 35 minutes or until charred on the outside and tender inside.
- Serve the Moroccan chicken with the vegetables with the dressing drizzled over and lemon wedges on the side
