Rosemary Roast Potatoes In Duck Fat

Ingredients
- 8 medium-sized potatoes, sliced and steamed
- 550 g duck fat
- maldon salt and pepper, to taste
- A few rosemary sprigs

Cooking Instructions
Preheat oven to 200 C
Peel and quarter potatoes.
Boil potatoes in a pan of water for approximately 10 minutes or till al dente.
Strain water from potatoes and place potatoes on an oven tray.
Rub surface of potatoes with duck ensuring fully covered and season with Maldon salt and cracked black pepper.
Place tray in middle of oven and cook for 45 minutes till golden brown.
Remove and gently break the potatoes using a fork.
For ultimate crispiness and flavour garnish with rosemary and finish by grilling for 15 minutes.
Serve in a dish.
