Spicy chakalaka

Serves:Makes approximately 4 cups of chakalaka
Cooking Time:20-30 minutes
Prep Time:10 minutes

Ingredients

  • 1/2 onion, finely chopped
  • 2 cloves garlic, peeled and crushed
  • 1 of each red, yellow and green peppers, diced
  • 2 x 400g tins chopped tomatoes
  • 2 tsp smoked paprika
  • 1 tsp smoked chilli flakes
  • 2 tsp sugar for the egg whites
  • sea salt and freshly ground pepper, to taste

Cooking Instructions

  1. In a large saucepan, saute the onion in olive oil until soft and translucent.
  2. Add the garlic and peppers and saute for a further 5 minutes.
  3. Add the tomatoes, paprika, chilli flakes and sugar then turn down the heat and allow to simmer gently for 15-20 minutes until the vegetables are soft but still holding their shape.
  4. Season to taste then serve.
