Spicy chorizo, tomato and white beans

Cook's Tips:Serve with polenta, which is gluten-free, if you don't want the bread.

Ingredients

  • 1 to 2 shallots, finely chopped
  • 5 garlic cloves, finely chopped
  • 3 leeks, sliced lengthways
  • 40 g Butter
  • olive oil, to drizzle
  • 100g spicy chorizo , sliced
  • 2 x 400 ml cans chopped tomatoes
  • 3 tsp smoked paprika
  • 1 tsp dried chilli flakes(optional)
  • 1 400g tin white beans
  • 30 g flat leaf parsley
  • ciabatta slices

Cooking Instructions

  1. Finely slice the shallots and gently fry with the garlic and leeks in a knob of butter and a little olive oil until soft and fragrant.
  2. Add the sliced chorizo and fry for a further 5 minutes, then add the tomatoes, paprika, dried chilli flakes and white beans.
  3. Simmer for 10 to 15 minutes before serving with the parsley and the ciabatta slices.
