Spicy chorizo, tomato and white beans

Cook's Tips: | Serve with polenta, which is gluten-free, if you don't want the bread. |
Ingredients
- 1 to 2 shallots, finely chopped
- 5 garlic cloves, finely chopped
- 3 leeks, sliced lengthways
- 40 g Butter
- olive oil, to drizzle
- 100g spicy chorizo , sliced
- 2 x 400 ml cans chopped tomatoes
- 3 tsp smoked paprika
- 1 tsp dried chilli flakes(optional)
- 1 400g tin white beans
- 30 g flat leaf parsley
- ciabatta slices

Cooking Instructions
- Finely slice the shallots and gently fry with the garlic and leeks in a knob of butter and a little olive oil until soft and fragrant.
- Add the sliced chorizo and fry for a further 5 minutes, then add the tomatoes, paprika, dried chilli flakes and white beans.
- Simmer for 10 to 15 minutes before serving with the parsley and the ciabatta slices.
