Smoked salmon carpaccio with lemon

Ingredients
- 2 x 250 g tubs crème fraîche
- 1 juiced and zested lemon, cut into 8 slices
- smoked salmon, choppped
- 10 radishes, rinsed and sliced
- 1 Tbsp baby capers
- 1 large handful micro leaves
- extra virgin olive oil, for drizzling
- black pepper, freshly ground

Cooking Instructions
- Combine the crème fraîche, lemon juice and lemon zest.
- Place the smoked salmon on a large rectangular platter.
- Place several teaspoons of lemon crème fraîche evenly over the salmon.
- Evenly top the salmon with the radishes, capers and micro leaves.
- Drizzle with extra virgin olive oil, some extra lemon juice and freshly ground black pepper.
- Serve with fresh rustica or sourdough bread and lemon wedges.
SUGGESTIONS
Do not season with salt as the smoked salmon is salty.
