Lemon mascarpone pots

Ingredients
- 600 ml mascarpone, at room temperature
- 50 g castor sugar, plus extra for dipping the pastry shapes
- 1/2 lemon, juiced and zested

Cooking Instructions
- Scoop the mascarpone into a large pan with the castor sugar.
- Stir to melt the sugar over a low heat, then simmer for 1 minute.
- Take the pan off the heat, add the lemon juice and zest and whisk well.
- Pour into 6 ramekins and refrigerate for 12 hours.
- Sprinkle with extra lemon zest before serving.
