Lemon mascarpone pots

Ingredients

  • 600 ml mascarpone, at room temperature
  • 50 g castor sugar, plus extra for dipping the pastry shapes
  • 1/2 lemon, juiced and zested

Cooking Instructions

  1. Scoop the mascarpone into a large pan with the castor sugar.
  2. Stir to melt the sugar over a low heat, then simmer for 1 minute.
  3. Take the pan off the heat, add the lemon juice and zest and whisk well.
  4. Pour into 6 ramekins and refrigerate for 12 hours.
  5. Sprinkle with extra lemon zest before serving.
