Lamb chops with lime, cumin and cardamom

Ingredients
- 1-2 Limes, cut into wedges
- A handful Pomegranate rubies, to serve
- Fresh coriander, for serving
- 6 Lamb chops
- 4 Tbsp olive oil, to drizzle
- freshly ground black pepper to taste
- 2 tsp salt
- 1 lime, zested and juiced
- 3 cardamom pods, cracked open
- 2 tsp ground cumin
- 6 garlic cloves, roughly chopped

Cooking Instructions
- Whisk together thegarlic, cumin, cardamom, lime juice, lime zest, salt, pepper and 2 teaspoons of the olive oil and transfer to a sealable plastic bag just large enough to hold the lamb chops.
- Add the lamb chops, seal the bag, forcing out the excess air, and massage the lamb until it is coated.
- Marinate at room tempreture for about 15 minutes, turning the bag occasionally.
- Heat 1 tablespoon of olive oil in a large non-stick pan over a high heat until hot but not smoking.
- Cook half of the chops for about 3-5 minutes on each side, transfer them to a platter and cover with foil.
- Wipe out the pan, then heat the remaining olive oil and cook the remaining chops in the same way.
- Transfer the chops to a warmed platter and serve with fresh coriander, pomegranate rubies and lime halves.
