Lactose free yoghurt

Ingredients

  • 1 cup Woolworths free from lactose low fat plain yoghurt
  • 1/2 English cucumber, grated
  • salt, to taste
  • 4 tbsp mint, chopped
  • 4 tbsp Dessicated coconut, toasted
  • 8 boneless chicken thighs
  • 4 tbsp fresh mint, roughly chopped
  • fresh limes, to serve
  • salt and freshly ground black pepper, to taste
  • 4 tbsp fresh coriander, chopped
  • 50 g Woolworths Indian Tikka Masala Paste
  • 500 g Woolworths Free from Lactose Low Fat Plain Yoghurt

Cooking Instructions

  1. In a large mixing bowl combine the 500 g yoghurt, 50 g tikka masala, 4 tbsp roughly chopped coriander, 4 tbsp roughly chopped mint and salt and pepper for seasoning. Add the 8 chicken thighs and massage for a minute before allowing to marinade for 15 – 30 minute or overnight if you have the time.
  2. While the chicken is marinating prepare the raita: Combine all the ingredients (1/2 grated English cucmber, 4 tbsp desiccated coconut, 4 tbsp roughly chopped mint, 1 cup Woolworths free from lactose low fat plain yoghurt, salt to taste) together and allow to sit.
  3. Heat a griddle pan over a high heat. Add the chicken thighs and grill for about 4 minutes a side. Turn over and cook the other side in the same way. Finish with a squeeze of lime or lemon and serve with the raita and naan or rice.
