Feta and zucchini fritters (copy)

Serving Suggestion:These can be made as a tasty side dish or as a small party snack, and are delicious served with tzatziki.

Ingredients

  • 4 courgettes, grated and the liquid squeezed out (about 1 full cup)
  • 50g feta cheese
  • 1 egg, lightly beaten
  • 1 tsp thyme, chopped
  • 6 garlic cloves, finely chopped
  • mint, to garnish
  • 1/4 cup fresh parsley,finely chopped
  • 2 1/2 cups flour
  • 4 small spring onions, finely chopped
  • 125ml breadcrumbs (preferably panko)
  • salt
  • 1.5 g pepper
  • vegetable oil, for frying
  • lemon wedges to serve
  • ready made tzatziki to serve

Cooking Instructions

  1. Grate the courgettes and then place them in a tea towel and wring out all the liquid. You want the grated courgettes to be as dry as possible. Place in a bowl and add the flour to coat the grated courgettes.  
  2. Add all the other ingredients and mix to combine.
  3. Heat the oil in a non-stick frying pan and fry dollops of the mixture, turning when golden brown on the one side. Drain on paper towel and serve with fresh lemon wedges and tzatziki.
