Sticky maple-glazed BBQ ribs

Ingredients

  • sea salt and freshly ground black pepper, to taste
  • 2 kg Pork ribs
  • 6 tbsp maple syrup
  • 65 ml water
  • 2 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 45 ml tomato paste
  • 2 tsp smoked paprika
  • 1/2 tsp cumin seeds
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 3 cups canola oil
  • 1 medium onion, roughly chopped

Cooking Instructions

  1. Preheat the oven to 180°C.  Season the ribs and roast for 90 minutes.
  2. To make the marinade, fry the onion in the canola oil. Once caramelized, add the spices and fry for a few minutes until fragrant. Add the remaining ingredients, mix and reduce until sticky.
  3. Remove the ribs from the oven and baste with the BBQ marinade. Return to the oven for 10 minutes, basting often until sticky and tender. Reserve a little marinade for serving.
