Sticky maple-glazed BBQ ribs

Ingredients
- sea salt and freshly ground black pepper, to taste
- 2 kg Pork ribs
- 6 tbsp maple syrup
- 65 ml water
- 2 tbsp apple cider vinegar
- 1 tbsp Worcestershire sauce
- 45 ml tomato paste
- 2 tsp smoked paprika
- 1/2 tsp cumin seeds
- 2 tsp ground coriander
- 2 tsp ground cumin
- 3 cups canola oil
- 1 medium onion, roughly chopped

Cooking Instructions
- Preheat the oven to 180°C. Season the ribs and roast for 90 minutes.
- To make the marinade, fry the onion in the canola oil. Once caramelized, add the spices and fry for a few minutes until fragrant. Add the remaining ingredients, mix and reduce until sticky.
- Remove the ribs from the oven and baste with the BBQ marinade. Return to the oven for 10 minutes, basting often until sticky and tender. Reserve a little marinade for serving.
