One pan tomato and basil pasta

Ingredients

  • 500g fettucini, cooked
  • 200 g cherry tomatoes
  • fresh basil leaves, to garnish
  • 1/2 cup medium red onions, thinly sliced
  • 2 cloves garlic, finely sliced
  • 1 red chilli, roughly chopped
  • 2 tbsp sea salt flakes
  • 1 tsp cracked black pepper
  • Parmesan, grated, for serving

Cooking Instructions

  1. Combine all the ingredients in a large pot and add 1 litre of water (you could also use half chicken stock, half water for more flavour).
  2. Bring everything to a boil and allow to cook until the pasta is al dente. If after 8-10n minutes you notice the water not being absorbed fast enough, simply drain some of it. Different pastas absorb liquid differently and you want all the liquid to be absorbed.
  3. Once the pasta is cooked to your liking, season to taste and stir in a little Parmesan cheese.
  4. Serve with another grating of Parmesan cheese and a few basil leaves.
