Tikka Chicken

Ingredients

  • 4 T cooking oil
  • 4 T Tikka spice
  • 1 T tomato paste
  • 2 T lemon juice
  • 1 tsp salt
  • 1/3 cup plain yoghurt
  • mini chicken breasts OR 1 pack chicken thighs and drumsticks OR 2 large brinjals, sliced
  • salt and pepper season

Cooking Instructions

  1. In a medium bowl, combine the oil, tikka spice and tomato paste and stir to combine well.
  2. Add the lemon juice and stir to combine.
  3. Marinade the chicken in the tikka mix for at least 2 hours or ideally overnight. If using brinjals, marinade for 2 hours.
  4. Take the chicken out the fridge one hour before cooking.
  5. Season the chicken with a little salt and pepper.
  6. Cook the chicken on an open gas fire, turning often to avoid sticking on the grill and basting with the extra marinade left in a bowl.
  7. Cook the chicken until cooked through, depending on the cut used
