Tikka Chicken
Ingredients
- 4 T cooking oil
- 4 T Tikka spice
- 1 T tomato paste
- 2 T lemon juice
- 1 tsp salt
- 1/3 cup plain yoghurt
- mini chicken breasts OR 1 pack chicken thighs and drumsticks OR 2 large brinjals, sliced
- salt and pepper season

Cooking Instructions
- In a medium bowl, combine the oil, tikka spice and tomato paste and stir to combine well.
- Add the lemon juice and stir to combine.
- Marinade the chicken in the tikka mix for at least 2 hours or ideally overnight. If using brinjals, marinade for 2 hours.
- Take the chicken out the fridge one hour before cooking.
- Season the chicken with a little salt and pepper.
- Cook the chicken on an open gas fire, turning often to avoid sticking on the grill and basting with the extra marinade left in a bowl.
- Cook the chicken until cooked through, depending on the cut used
