Lamb Vindaloo Curry

Ingredients

  • Vindaloo cook-in sauce
  • 1 T vegetable oil
  • 400 g free-range lamb cubes (boneless)
  • fresh coriander to garnish

Cooking Instructions

  1. Heat oil to medium-high heat, in a medium saucepan. Add the lamb cubes and fry for 6 minutes.
  2. Add the contents of the jar of sauce. Rinse the remaining sauce with 100 ml of water and add this to the pan. Reduce the heat and cook for 30 minutes (lid on) until the lamb is cooked through and tender.
  3. Add the spice blend and cook for a further minute with the lid off. Season to taste.
  4. Serve with basmati rice, poppadoms and freshly chopped coriander, with any of the Woolworths pickles or chutneys of your choice.
