Steamed prawns and melon soup sips

Ingredients

  • 6 sprigs mint
  • pinch pepper
  • pinch salt
  • 6 prawns, medium size, cleaned
  • 1 whole ripe melon

Cooking Instructions

  1. Peel, seed and juice the melon. Poor it through a sieve to strain and refrigerate until you need.
  2. Season the prawns then steam or blanch them until they have just turned pink. Chill and remove the shells, just keeping the tail for decoration. (You can also buy cooked prawns to save time.)
  3. Wash and trim the mint sprigs.
  4. Chill six shot glasses in the fridge.
  5. To serve, fill the glasses with the spanspek juice, garnish with a prawn and mint sprig and serve as an elegant welcome bite.
