Grilled fish with green spelt salad
Ingredients
- 1 lemon, zested and juiced
- 2 tbsp salt free seasoning
- 4 tbsp green olives, roughly chopped
- 4 tbsp basil, roughly chopped
- 2 tbsp mint, finely chopped
- 4 tbsp parsley, roughly chopped
- 2 x 150 g Woolworths spelt
- 1 lemon, cut into wedges
- 4 tbsp salt free seasoning
- extra virgin olive oil, to drizzle over and coat
- 4 x 150 g hake fillets

Cooking Instructions
- Coat the x 150 g hake fillets in some olive oil before spooning over the 4 tbsp salt free seasoning and coating well. Place on an oven tray to cook at 200°C for about 7 minutes a side or until the fish is slightly charred outside and perfectly cooked inside.
- For the green spelt salad: Add the2 x 150 g spelt to a large mixing bowl along with the chopped herbs (4 tbsp parsley, 2 tbsp mint, 4 tbsp basil), 4 tbsp roughly chopped olives and 2 tbsp salt free seasoning.
- Toss together with the freshly squeezed lemon juice and lemon zest. Serve with the fresh also served with fresh lemon juice squeezed over.
