Honey and soy glazed chicken

Ingredients

  • 350 g asparagus, trimmed
  • salt and freshly ground black pepper
  • fresh coriander, to garnish
  • 2 tbsp sunflower oil
  • 8 chicken thighs, skinless, deboned and cubed
  • 4 tbsp honey
  • 2 tsp soy sauce
  • 1/4 cup fresh lime juice, plus wedges for serving
  • 2 tsp fresh ginger, peeled and finely chopped
  • 4 cloves garlic, finely chopped

Cooking Instructions

  1. Preheat the oven to 190 °C.
  2. Whisk the garlic, ginger, lime juice, soy sauce and honey in a large bowl. Add the chicken and toss to coat. Let the chicken marinate for at least 30 minutes.
  3. Thread the chicken cubes onto 4 skewers.
  4. Place the chicken and marinade on a foil-lined rimmed baking tray and roast for about 15 – 20 minutes until cooked through and sticky.
  5. While cooking the chicken, toss the asparagus and spring onions with sunflower oil and place on another rimmed baking sheet.
  6. Season with salt and pepper and roast for 10 – 15 minutes, shaking the pan halfway through, until tender.
  7. Remove the chicken from the skewers and serve warm with the roasted asparagus and spring onion, topped with fresh coriander.
