Pulled beef, roast veg mac and cheese

Ingredients

  • 800 g Woolworths roasting vegetables
  • 2 tbsp olive oil
  • 1 tbsp fresh thyme, chopped
  • salt and pepper
  • 4 tbsp Butter
  • 4 tbsp cake flour
  • 1 cup full cream milk
  • 2 tsp Dijon mustard
  • 1 cup cheddar cheese, grated

  • 500 g macaroni, cooked

Cooking Instructions

  1. Preheat oven to 200C.
  2. Place the vegetables into a roasting dish, then drizzle with oil, add thyme and season. Roast for 20 minutes or until the vegetables are tender.
  3. Place the butter for the white sauce and melt over a medium heat.
  4. When the butter is melted, mix the flour in to make a smooth paste.  Cook it for 1 minute.  Take off the heat.
  5. Mix in the milk, a little bit at a time, to make sure there are no lumps.
  6. Put the pot back on the stove and heat it up to boiling.  Stir it all the time.  Let it boil for 5 minutes and take it off the heat.  Add the salt, pepper and mustard.  Stir in half the cheese.
  7. Cook the beef shin according to the packet instructions.
  8. Mix together the white sauce, beef, vegetables and macaroni, then transfer to an oven dish.
  9. Scatter the remaining cheese on the top then bake for 20 minutes until the cheese is melted and browning on top.
