Easy, spicy Biryani

Ingredients
- olive oil, to drizzle
- 4 red onion, thinly sliced
- 125 g seedless raisins
- 2x15 g sachets Woolworths pilau rice spice blend
- 1/4 tsp Turmeric
- 4 chicken breasts, cubed
- 560 g basmati rice, cooked
- salt, to taste
- Pomegranate rubies, to serve
- yoghurt, tomato and coriander sambal, for serving

Cooking Instructions
- Heat the olive oil in a pan over a medium heat. Add the onion and cook until brown and soft. Add the raisins, pilau rice spice blend, turmeric and chicken, coating the chicken in the spice and browning. Add a little water if it sticks.
- Once the chicken is cooked, add the rice and toss through, coating it in the spice. Season with salt to taste.
- Garnish with the pomegranate rubies and serve with the yoghurt, tomato and coriander sambal.
FLAVOUR NOTE
Other delicious combinations are saffron and atchar.
