Herbed tomato mince with cheesy polenta

Ingredients

  • 1 tbsp balsamic vinegar (optional)
  • 1 x 800 g can Italian whole peeled tomatoes, crushed
  • sea salt and freshly ground black pepper, to taste
  • 3/4 - 1 cup Parmesan, finely grated
  • 1/2 cup polenta
  • sea salt and freshly ground black pepper, to taste
  • 1/4 cup celery leaves, finely chopped
  • small bunch basil leaves
  • 1-2 sprigs fresh rosemary sprigs
  • 1/4 cup flat leaf parsley, chopped
  • 1/2 cup beef stock
  • 500 g Woolworths free-range beef mince
  • 4 garlic cloves, crushed
  • 4 tbsp olive oil
  • 1 carrots, finely chopped
  • 1 celery stick, finely chopped
  • 1 large onion, finely chopped

Cooking Instructions

  1. Soften the onion, celery and carrot in the oil, then stir in the garlic.
  2. Add the mince and stir until browned. Add the tomatoes, stock, herbs, celery leaves and seasoning. Cover and simmer for 50 minutes.
  3. Stir in the balsamic vinegar. Cook uncovered over a brisk heat for 5–10 minutes to reduce the liquid if necessary. Check the seasoning.
  4. To make the cheesy polenta, cook the polenta according to package instructions, then whisk in enough boiling water to create a loose consistency. Stir in the cheese and season. Serve with the mince.
