Beef/Chicken/Veg Soup

Ingredients
- 500 g Beef Shin (Bone In)
- 400 g Skinless Chicken Breasts
- 400 g Free Range Skinless Chicken Breast
- 1,5 kg Bulk Chunky Vegetable Soup Mix
- 500 ml Organic Liquid Chicken Stock
- 500 ml Organic Liquid Vegetable Stock
- 500 ml Organic Liquid Beef Stock
- 300 g Samp & Beans
- 250 g Spelt & Barley
- 250 g Barley

Cooking Instructions
- Heat a large saucepan over medium heat. Add 15 ml olive oil and 4 cloves crushed garlic and fry gently for a minute.
- Add the bulk veg pack and fry for 10 minutes, stirring occasionally until slightly golden and fragrant.
- Pour in the carton of Woolworths organic chicken stock, 1 cup of barley and top up with water until
- vegetables are covered. Season with a pinch of salt and pepper. Simmer over a medium-high heat for 30 – 40 minutes until the veggies are softened.
- Poach chicken in the broth for the last 10 – 15 minutes. Add the chicken breasts to the soup and submerge to
- cover completely by the liquid, allow to poach in low simmering broth until cooked through.
- Remove the chicken from the broth and allow to cool , shred and add back into the soup.
