Beef/Chicken/Veg Soup

Ingredients

  • 500 g Beef Shin (Bone In)
  • 400 g Skinless Chicken Breasts
  • 400 g Free Range Skinless Chicken Breast
  • 1,5 kg Bulk Chunky Vegetable Soup Mix
  • 500 ml Organic Liquid Chicken Stock
  • 500 ml Organic Liquid Vegetable Stock
  • 500 ml Organic Liquid Beef Stock
  • 300 g Samp & Beans
  • 250 g Spelt & Barley
  • 250 g Barley

Cooking Instructions

  • Heat a large saucepan over medium heat. Add 15 ml olive oil and 4 cloves crushed garlic and fry gently for a minute.
  • Add the bulk veg pack and fry for 10 minutes, stirring occasionally until slightly golden and fragrant.
  • Pour in the carton of Woolworths organic chicken stock, 1 cup of barley and top up with water until
  • vegetables are covered. Season with a pinch of salt and pepper. Simmer over a medium-high heat for 30 – 40 minutes until the veggies are softened.
  • Poach chicken in the broth for the last 10 – 15 minutes. Add the chicken breasts to the soup and submerge to
  • cover completely by the liquid, allow to poach in low simmering broth until cooked through.
  • Remove the chicken from the broth and allow to cool , shred and add back into the soup.
