Hearty Beef Soup

Ingredients
- beef stock
- 15 ml Olive oil
- Beef shin
- Sea salt and freshly ground black pepper
- 4 cloves crushed garlic

Cooking Instructions
STEP ONE
- Heat a large saucepan over medium heat.
- Add 15 ml olive oil to the saucepan.
- Season the beef shin well with salt and pepper.
- Sear until nicely browned on all sides, about 15 minutes total.
- Remove it from the pot, discard the oil, and return the shin to the pot.
- Add 4 cloves crushed garlic.
STEP TWO
- Add the soup mix and fry for 10 minutes, stirring occasionally until slightly golden and fragrant.
STEP THREE
- Prepare the stock as per the pack instructions.
- Top-up with water until vegetables are covered.
- Season with a pinch of salt and pepper.
- Simmer over a medium-high heat for 30 – 40 minutes until the veggies are softened.
STEP FOUR
- Season to taste and mix well.
