Pan-grilled smashed chicken fillets

Ingredients

  • sea salt and freshly ground pepper, to taste
  • 1/4 cup lemon juice
  • olive oil
  • 1 garlic cloves, crushed
  • 35 g watercress, chopped
  • 4 tsp fresh mint, finely chopped
  • 4 tsp fresh dill, chopped
  • fresh herbs, to garnish
  • steamed potatoes, for serving
  • sea salt and freshly ground black pepper, to taste
  • olive oil
  • 4 skinless, boneless chicken breast fillets

Cooking Instructions

  1. Place the chicken fillets between 2 sheets of baking paper and flatten until very thin using a meat mallet or a rolling pin. Oil and season.
  2. Sear in a very hot pan until brown but still moist. Serve with the sauce and steamed potatoes and garnish with fresh herbs.
