Stewed winter fruit with quinoa crumble

Serves:6-8 portions

Ingredients

  • 1/3 cup unsalted butter, melted
  • 1 orange, zested
  • 1 x 3 cm ginger, freshly grated
  • 1 cup quinoa, cooked
  • 50 ml honey
  • 5 ml corn flour
  • 130 g gooseberries
  • 2 granadillas
  • 2 oranges
  • 1/4 pineapple

Cooking Instructions

  1. Pre-heat oven to 170˚C.
  2. Cut the pineapples into 1cm cubes and place in a bowl. 
  3. Wash gooseberries and place in the bowl with the pineapple.
  4. Segment the two oranges into the pineapple bowl and when done segmenting squeeze all the juice left in the orange into the bowl.
  5. Slice open the two granadillas and scoop the inside into the pineapple bowl.
  6. Place chopped fruit into a saucepan and cook gently for 5 minutes.
  7. Add the honey.
  8. Mix the corn flour with 15ml boiling water and add to the pan.  Cook for another 5 minutes.
  9. Remove the pan from the heat and pour into an oven proof dish.
  10. Mix the quinoa, butter, orange zest and grated ginger in a bowl and cover the top of the pineapple mixture.
  11. Place in the oven and bake for 45 minutes until the quinoa is crisp. 
  12. Serve hot garnished with sprigs of fresh mint.
