Grilled chicken skewers

Ingredients

  • 1 tsp Chipotle seasoning
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1 1/2 tbsp mustard powder
  • 1 tsp red wine vinegar
  • 1 tbsp maple syrup
  • 500 ml tomato puree
  • 1/2 red onion, finely chopped
  • organic olive oil, for drizzling

Cooking Instructions

  1. Heat a small saucepan over a medium-high heat.
  2. Add the oil and onion and sauté for 2 minutes or until tender.
  3. Stir in the remaining ingredients, reduce the heat to low and cook for 5 minutes, stirring occasionally. Set aside.
  4. Skewer the chicken pieces on metal or small wooden skewers, pre-soaked in water. Place 2 halved thighs on each skewer.
  5. Coat the chicken in olive oil, season and cook in a hot grill pan for 6 minutes on each side or until done.
  6. While still in the grill pan, baste one side of the chicken pieces generously with the maple chipotle sauce, turn them over, and grill for 2 minutes.
  7. Baste again, turn the chicken pieces over and grill for 2 more minutes.
