Trail mix

Serves:6-8 portions

Ingredients

  • 80 ml coconut flakes
  • 80 ml dried figs, chopped
  • 80 ml dried apricots
  • 80 ml dried apples
  • 80 ml cashew nuts, raw and unsalted
  • 80 ml whole almonds, raw and unsalted
  • 80 ml pumpkin seeds

Cooking Instructions

  1. Heat oven to 180°C.
  2. Roast almonds and cashed nuts until golden in colour and once cool chop roughly into smaller pieces.
  3. Roast pumpkin seeds until they start to pop, then bring to room temperature.
  4. Roast coconut flakes until golden brown, then cool to room temperature.
  5. Cut apricots, apples and figs into strips about 2mm wide and add to the nut mixture.
  6. Combine all the ingredients well and store in an air-tight container until needed.
